Domain Jonathan Didier Pabiot
Domaine Jonathan Pabiot is a family-owned wine estate in Pouilly-sur-Loire, within the prestigious Pouilly-Fumé appellation of the Loire Valley, France. The domaine extends approximately 20 hectares of Sauvignon Blanc-dominated vineyards, planted over a range of distinct limestone, clay-limestone (caillottes) and flinty soils, which contribute to expressive terroir-driven wines.
The estate is led by Jonathan Didier Pabiot, representing the fifth generation of the family. After early experience with renowned natural winemakers, Jonathan returned to the family estate and championed a shift to organic viticulture in the early 2000s, achieving organic certification (AB) and becoming the first Demeter-certified biodynamic producer in the Pouilly-Fumé appellation in 2016.
The domaine’s philosophy centers on respect for the fruit and the living vineyard. Soil health, biodiversity, and minimal intervention guide both vineyard work and cellar practice. The team uses indigenous yeasts, hand harvesting, low yields, and gentle ageing techniques (stainless steel, concrete, and neutral oak) to produce wines with clarity, minerality and a transparent expression of terroir.
